IMG_0184For the Main Dish:
10oz Eggplant, cut into 1″ cubes
4 Tblsp of Olive Oil
1 Large Onion, chopped
2 Cloves of Garlic, chopped
1 Tsp of Ground Cinnamon
1 Tbsp Paprika
1 Tbsp of Dried Oregano
1 Tsp of Salt
0.5 Tsp of Ground Black Pepper
20oz of Ground Meat (Chicken, Pork or beef, etc)
0.5 Cups of Tomato Sauce
3.5oz of Cheese, shredded

For the Cheese sauce:
3oz of Cream Cheese
0.5 Cups of Heavy Whipping Cream
1 Clove of Garlic, crushed
0.25 Tsp of salt
3.5oz of Cheese, shredded

1. Preheat the oven to 360°F (185°C).
2. In a large frying pan, fry eggplant in olive oil on medium heat, seasoning with salt and pepper.
2. Add onion, garlic and spices, frying for a few minutes until the onion and eggplant start to soften.
3. Add ground meat and fry until cooked through.
4. Stir in tomato sauce and let simmer for a few minutes.
5. In a saucepan, mix the ingredients for the cheese sauce and simmer for a few minutes until it thickens.
6. Transfer the meat mixture into a 9″ baking dish.
7. Pour the sauce on top and cover with the remaining cheese.
8. Place in the oven for about 20 minutes or until the cheese turns a nice golden color.
